Ingredients
60 ml olive oil
40 ml lemon juice
2 cloves garlic, crushed
4 medium-sized firm fish steaks
50 ml honey
10 ml dried, crushed chillies
Method: 00:10
Mix half the olive oil with half the lemon juice, and add the garlic. Place the fish steaks into a shallow dish and pour the olive oil mixture over them. Turn to coat. Allow to stand for five to 10 minutes.
Cook the fish over medium-hot coals for about five minutes on each side. It is cooked when the flesh flakes easily and is opaque. While the fish is cooking, mix the remaining oil and lemon juice with the honey, chillies and origanum.
Remove the fish from the heat and place into a clean dish. Pour the dressing over the fish and turn to coat both sides. Season to taste with salt and freshly ground black pepper before serving hot with lemon wedges.
