We know how much South Africans love a fresh plate of prawns, and they are actually easy to cook yourself. No need to head out to a restaurant. Our grilled prawns make for a light bite with plenty of herbs, olives and a little bit of chilli. Drizzle them with our life-changing coriander dressing. We also recommend you buy prawns that have already been cleaned to save yourself the hassle.

SERVES 6 // COOKING TIME 45 mins

INGREDIENTS
2 cloves garlic, crushed
1 red onion, roughly chopped
1 red pepper, deseeded
1 red chilli, chopped
Small piece of lemongrass, grated
Juice of 2 lemons, plus 1 lemon, sliced, to serve
100g olives
50g coriander, chopped
10g mint, chopped
1 kg queen prawns, cleaned
For the dressing
20g coriander, chopped
1 tbsp apple cider vinegar
Juice of 1 lime
50 ml sesame oil
50 ml olive oil
Salt

METHOD
1. Place the garlic, onion, pepper, chilli, lemongrass, lemon juice, olives, coriander and mint in a food processor, and blend until smooth.
2. Pour into a bowl and mix the prawns in the paste.
3. After 15 minutes, place a griddle pan on high heat and sear the prawns on both sides for one minute or until golden and the tails start to curl.
For the dressing
1. Combine the coriander, vinegar and lime juice.
2. Mix the sesame and olive oils, then slowly add the oil to the lime juice mixture. Season well.
3. Drizzle the dressing over the prawns, then serve with lemon slices on the side.
